Not gonna lie, I wrote up this post a week ago, but it didn't save. #fail. So here it goes again... I hope I can muster up the excitement that I had for these babies last week!
Bacon. Cheese. Chives. Butter. These definitely aren't healthy, but boy are these delicious.
I have found that I tend to bake/cook more adventurously when I'm at school. This might be because I do all my grocery shopping on my own, so I have everything I need to make whatever I'd like to make. OR, it's because my roommates are enablers who tell me to make anything and everything I'm thinking about making.
Either way, the thought of bacon cheddar scones entered my mind, and a quick google search brought me this recipe.
Because I wanted these biscuits on a whim, I didn't have all the ingredients the recipe called for. But that's okay, because I think improvisation is the best part of cooking!
Mix lemon juice and milk to make buttermilk, sub a shredded cheese blend for cheddar, and do whatever it takes to get the biscuits into your belly as soon as possible.
Once I mixed up these biscuits and dropped them on the baking sheet, I topped them with even more cheese, because I am an animal.
Warning: these make pretty huge biscuits, so if they're gonna be a side, you might wanna make 15-20 biscuits instead of the 12 the recipe calls for. They also freeze pretty well, so never fear!
But yeah. This biscuit recipe came together in less than 20 minutes, was super easy, and super delicious. Would highly recommend.
And they're SO FLUFFY!
